First, tell
your baker the number of servings required, your desired type and design,
and then your bottom line price. Be very clear that these specifications
are not negotiable and ask if they can accommodate your needs. You'll
find that most merchants in the "catering" field can find ways to be flexible
rather that turn away business. Ask what they can provide in relation
to your specifications and then get it in writing.
Be Realistic!
You can't
have an eleven tier Fondant masterpiece for $1.50 a slice, so do your homework
first. Realize that the more elaborate the decoration the higher
the price. If your vision for your cake includes 150 spun sugar roses,
ask you baker if you can provide them and then get to the library and find
out how! Some of the most beautiful decorating ideas can also be
some of the most economical. Satin ribbon, coordinated with your
wedding colors can be purchased on sale in any craft store down right cheaply!
Make sure that your baker knows in advance that you will be providing these
items. Another reasonable option can be fresh flowers, talk to your
florist and find out what they can provide. As most flowers are sold
by the stem, decide on a type with more than one bloom. Alstromerius
is an excellent option as it resembles a small orchid and typically has
three blooms per stem. Some of it's other advantages are the wide
variety of colors it comes in and the durability of its petals. On
the day of your wedding, enlist the assistance of your attendants or those
aunts that are dying to help out. Buy a roll of florist tape ($1.00-$2.00
either from your florist or a craft store) and have your "helpers" remove
each bloom and wrap the end with the tape, these could then be brought
to your baker or the reception venue if the cake is being assembled there.
Keep in mind that anything that cuts down on the intricacy of the "Icing
Art Work" also helps cut the cost of your cake.
Pay only for Decorating!!
Did you
know that some bakers will actually let YOU bake the cake??!! Ask
if they offer a "decorating only" service and take advantage of the savings.
This can be an excellent way of "up-grading" your cake selection.
Most merchants will insist however, that they provide the decorating medium
(artists can be temperamental) so don't plan on supplying a few cans of
Betty Crocker "Ready to Spread!"
